Altoids® Copycat Recipe

First sprinkle gelatin onto 1/4 cup cold water.

Let that sit for 5-10 minutes to soften.

Gently heat (over woodstove or in a bowl of hot water)

Whisk to dissolve the gelatin.

Sprinkle 1/2 teaspoon of Xanthum Gum over dissolved gelatin

and whisk, whisk, whisk to incorporate the gum.

(It would rather clump.)

Then put the mixture in the bowl of a heavy duty stand mixer.

(Mine is a Cuisinart.)

Add a dram (or more) of peppermint oil.  

(Do not use extract - it is too volatile.)

Add a pound of powdered sugar and mix.

It is hard to know how much this makes because we keep testing to see if it's dry enough.

It probably makes more than 12 tins of Altoids® Copycats for less than $3.00.
